A kitchen scale measures the mass of an ingredient directly in grams or ounces, eliminating the huge inaccuracies inherent in volume measurements like cups. For example, a cup of flour can weigh anywhere from 110 grams to 150 grams depending on environmental humidity, packing density, and the scoop technique. Using a digital scale ensures that 120 grams of flour is always 120 grams of flour, delivering consistent results every time you bake.

Scales also streamline the mixing process. By utilizing the 'tare' button (which resets the display to zero), a baker can weigh multiple ingredients sequentially directly into a single mixing bowl, saving time and reducing dirty dishes. Look for scales that measure in 1g or 0.1g increments with a high weight capacity.

Common mistake

Buying a scale that lacks a 'tare' (zero) button, or weighing very small quantities (under 5g of yeast or salt) on a low-precision scale, which can lead to significant measurement errors.
