Volume measurement determines the amount of space an ingredient occupies rather than its actual mass or weight. Standard tools for volume measurement in the kitchen include dry measuring cups, liquid measuring cups, measuring spoons, and graduated pitchers. While volume measurement is fast, convenient, and highly intuitive for everyday cooking (such as measuring liquids for soups or stocks), it is inherently flawed for measuring dry solids. This is because dry ingredients can compress, trap air, or absorb humidity, changing their packing density significantly.
For example, a cup of flour can vary in weight from 110g to 150g depending on whether it is sifted, scooped directly from the bag, or packed. Because of this high variability, volume measurement is a common source of failed baking projects. Professional bakers almost exclusively use mass (weight) measurements on a scale for dry ingredients, reserving volume measurements for liquids, which do not compress and maintain a constant volume under normal room temperatures.
Using volume cups to measure dry ingredients in delicate baking recipes, which introduces up to 30% error in the flour-to-liquid ratio and results in dense, dry cakes.
US recipes rely heavily on volume cups and spoons, whereas European, British, and Australian recipes favor weight-based measurements in grams for dry ingredients.
