Xanthan gum is a food additive produced by fermenting simple sugars with the bacterium Xanthomonas campestris. The resulting gel is dried and ground into a fine, off-white powder. In gluten-free baking, xanthan gum is an indispensable ingredient because it behaves as a direct substitute for gluten. When mixed with water, it hydrates into a highly viscous, elastic gel that binds flour particles together, traps gas bubbles released by leaveners, and retains moisture in the baked crumb. Without this binder, gluten-free doughs and batters lack cohesion, causing cookies, cakes, and breads to crumble apart easily upon cooling.

Because xanthan gum is extremely potent, it must be measured with absolute precision. A recipe typically requires only 1/4 to 1/2 teaspoon per cup of gluten-free flour. Adding too much xanthan gum will make batters slimy, heavy, and unpleasantly gummy, ruining the texture of the bake.

Common mistake

Adding xanthan gum to a gluten-free flour blend that already contains it. Double-dosing xanthan gum makes the batter incredibly slimy and yields a heavy, rubbery cake.
