Chocolate Weight & Baking Substitutions
Weight conversions between chocolate chips and block chocolate, and how cacao percentages affect melted structure.

1 Cup Chocolate Chips = 170g (6 oz) • 4 oz block chocolate = 2/3 Cup Chips (only for folding in)
Chocolate chips are designed to hold their shape under heat because they contain less cocoa butter and more emulsifiers/stabilizers than block baking chocolate. Because of this, chocolate chips do not melt smoothly for glazes or ganache. When converting block chocolate to chocolate chips by volume: 1 cup of chocolate chips weighs approximately 170 grams (6 ounces).
Cacao percentages (e.g., 60%, 70%) indicate the total weight of cocoa solids and cocoa butter. Higher percentages melt faster and are less sweet, requiring adjustments to recipe sugar. In baking batters, chocolate chips can be folded in directly, but for glazes, ganaches, or dipping, always use chopped baking chocolate blocks to ensure a glossy, smooth finish that sets properly.
